Preparation

Chicken Wings
- In a bowl, combine chicken, buttermilk, 10g salt, and sugar. Marinade in fridge overnight
- Mix flour, smoked paprika and remaining salt.
- Divide into two. Strain the buttermilk marinade off the chicken.
- Mix one of the divided flour to form a light batter.
- Dip marinated chicken into the other flour mix then into the batter mix.
- Shake off excess batter and fry in hot oil (160c) for 10 minutes.
- Transfer to a plate. Lined with paper tower.
- In a bowl, combine chicken, buttermilk, 10g salt, and sugar. Marinade in fridge overnight

- Mix together the remaining ingredients.
- Let it marinade and use when required.
- Set Aside.
- Mix together the remaining ingredients.

- In a bowl, combine mayo with blue cheese and the rest.
- Blend until smooth.
- Set Aside.

Final Plating
- On a plate, serve chicken wing with a side of slaw and blue cheese dressing.
- Garnish with Pickles.
