- Debone and portion and season fish fillet. Use as required.

Kimchi Gravy
- Saute ingredients for Kimchi Gravy until fragrant, add in seasoning, bring to boil, let it cool and blend into paste.

- Mix well ingredients for "Fish Roulade Filling", keep in freezer for 30 minutes.

- Stuff prepared "Fish Roulade Filling" into barramundi fish fillet, coat with corn flour and deep-fry until crispy.
