Marination

  • Boneless Chicken, cubed 600 g
  • Corn Flour 50 g
  • Whole Egg 1 pc

Aromatic Ingredients

  • Garlic, blended 40 g
  • Shallot, blended 100 g
  • Young Ginger, blended 100 g
  • Cooking Oil 100 ml
  • Sesame Oil 10 g

Basil Sauce Ingredients

  • Dark Soy Sauce 40 g
  • Chilli Boh 40 g
  • Basil Leaf, deep-fried, chopped 30 g
  • White Peppercorn Powder 3 g

Garnish

  • Red Chilli, sliced 50 g
  • Green Chilli, sliced 50 g
  • Red Onion, sliced 100 g
  • Dried Chilli, deep-fried till crispy 20 g
  • Thai Basil Leaf 50 g
  1. Marination

    • Coat chicken with ingredients.
    • Deep-fry marinated chicken till fully cooked. Set aside.
  2. Aromatic Ingredients

    • Prepare and set aside.
  3. Basil Sauce Ingredients

    • Prepare and set aside.
  4. Basil Sauce

    • Saute "Aromatic" ingredients lightly and add in ingredients for "Basil Sauce".
    • Bring to boil and allow to simmer for 2 minutes.
  5. Garnish

    • Stir-fry ingredients for "Garnish", add in fried chicken, "Basil Sauce", stir-fry for approximately 1 minute with high heat.
    • Dish up, ready to serve.
