Base Sauce

Seasoning

  • Black Pepper, crushed 30.0 g
  • Nutmeg powder 5.0 g
  • Shallots, puree 30.0 g
  • Garlic, Puree 15.0 g
  • Galangal, puree 20.0 g
  • Turmeric Powder 5.0 g
  • Lemongrass, chopped 5.0 g
  • Sugar 20.0 g
  • Kaffir lime leaf, blended 10.0 g

Protein/Sides

  • Chicken thigh (chicken chop), deep fried 1.0 pc
  • Brioche burger bun 2.0 pc
  • Lettuce (per head) 1.0 pc
  • Red Tomato 2.0 slice
  • French Fries (per portion) 1.0 pc
  • Side Vegetables (Broccoli, Carrot) (per portion) 1.0 pc

Preparation

  1. Base Sauce

    • Mix water and Knorr Demi Glace Brown Sauce Mix.
    • Bring to boil.
    • Set aside.
  2. Seasoning

    • Saute seasoning ingredients till fragrant. 
    • Mix with prepared demi glace. 
    • Bring to a simmer, set aside.
  3. Protein/Sides

    • Season chicken thigh and deep fry.
    • Deep fry fries and blanch side vegetables to desired doneness.   
  4. Final Plating

    • Assemble the burger based to your liking.
    • Pour over sauce onto fried chicken chop.
    • Serve with fries and side vegetables.
