- Double boil and slowly whisk egg yolk.
- Slowly drizzle in melted clarified butter and whisk till rich and creamy. Add in curry leaves.
- Lastly fold in Lady's Choice Real Mayonnaise.
- Set aside.

- Mix Macaroni and Salted Egg Base Sauce thoroughly.
- Shape/Mold to desired shape and leave in chiller overnight to set.
- Coat chilled patty in seasoned flour, followed by egg wash and lastly breadcrumbs.
- Deep fry till golden brown.
- Set aside.
- Mix Macaroni and Salted Egg Base Sauce thoroughly.

Final Plating
- Butter and grill brioche bun till crispy.
- Layer with Hollandaise Mayo, followed by lettuce and tomato.
- Lastly, place macaroni and cheese patty before covering the top with the other halve.
