  • Cucumber 200.0 g
  • Daikon 150.0 g
  • Carrots 100.0 g
  • Filtered Water 500.0 g
  • White Vinegar 150.0 ml
  • Sugar 50.0 g
  • Pickle Water

Chicken Breast Marination

  • Chicken Breast, prepared 10.0 pc
  • Garlic, chopped 30.0 g
  • Ginger, chopped 20.0 g
  • Soy Sauce 30.0 g
  • Fish Sauce 10.0 g

Preparation

  1. Cucumber, Daikon & Carrot Pickles

    • Cut cucumber lengthwise, in batonnetes.
    • Julienne the carrot and the daikon.
    • Mix water, vinegar and sugar for the pickling water. Soak vegetables in pickling water for minimum 4 hours in chiller.
  2. Chicken Breast Marination

    • Mix all ingredients and marinate in the chiller for 2 hours.
    • Grilled the chicken until tender.
    • Slice and portion up for the sandwich.
  3. Assembly

    • Spread baguettes evenly with mayonnaise.
    • Top with prepared chicken breast, carrots, cucumber, leaf or basil, mint and jalapeno, if desired. Serve immediately.
