Protein Marinade

Basic Demi Glace Brown Sauce

Demi-Glace Orange Sauce

  • Butter 15.0 g
  • Onion, chopped 20.0 g
  • Bay Leaf 2.0 g
  • Orange Concentrated Fruit Drink Base 200.0 ml
  • Basic Demi Glace Brown Sauce (prepared) 500 gm

Blanched Vegetables

  • Baby Carrot 100.0 g
  • Broccoli 100.0 g
  • Cauliflower 150.0 g
  • Butter 20.0 g
  • Salt & Pepper (to taste)

To Serve

  • Mozzarella Cheese (5 set) 150.0 g

Preparation

  1. Protein Marinade

    • Place all ingredient for "Protein Marinade" into mixing bowl, marinade chicken for appximately 60 minutes. Set aside for later use.
  2. Basic Demi Glace Brown Sauce

    • Add Knorr Demi Glace Brown sauce into a pot of water and stir throughly.
    • Bring to boil with low heat and allow to simmer for 2 minutes. Set aside for later use. 
  3. Demi-Glace Orange Sauce

    • Saute butter with onion. Then, add the prepared Basic Knorr Demi Glace Brown Sauce along with other ingredients.
    • Bring sauce to boil and then simmer for 2 minutes. Set aside for later use.      
  4. Blanched Vegetables

    • Blanch all vegetables in the pot of water.
    • Blanch all vegetables in the pot.
    • Add butter, blackpepper & Salt into vegetables before serving.  
  5. To Serve

    • Grill chicken chop to cooked. Then, pour over it with the prepared Demi-Glace Orange Sauce.
    • Top chicken chop with mozzarella cheese and melt it using kitchen torch.
    • Serve chicken chop along with the sauteed vegetables.
