  • Barramundi fish fillet 1000.0 g
  • Salt To Taste

Kimchi Gravy

Fish Roulade Filling

  • Fish paste (out source) 1000.0 g
  • Carrot, chopped 100.0 g
  • Spring onion, sliced 50.0 g
  • Sweet turnips, chopped 300.0 g

Preparation

  1. Fish Marinade

    • Debone and portion and season fish fillet. Use as required.
  2. Kimchi Gravy

    • Saute ingredients for Kimchi Gravy until fragrant, add in seasoning, bring to boil, let it cool and blend into paste.
  3. Fish Roulade Filling

    • Mix well ingredients for "Fish Roulade Filling", keep in freezer for 30 minutes.
  4. Fish Roulade

    • Stuff prepared "Fish Roulade Filling" into barramundi fish fillet, coat with corn flour and deep-fry until crispy.
  5. Final Plating

    • Serve on a platter with Kimchi Gravy (pour-over, side).
