Sambal

Ikan Bilis and Kacang

Compressed cucumber with sugar syrup inflused with lime and lemongrass.

  • Japanese cucumber cube 150.0 g
  • Filtered Water 200.0 ml
  • Sugar 80.0 g
  • KNORR® Lime Flavoured Powder 34.0 g
  • Lemongrass(pound and slice) 30.0 g

Mango salad

  • Semi ripe mango 50.0 g
  • Veg, Cabbage, Red 50.0 g
  • Compresserd cucumber 50.0 g
  • Knorr Rock Sugar Honey Sauce 40.0 g
  • Pickling liquid 30.0 g

Finished with a crunchy anchovy and peanut mix, and a refreshing compressed cucumber salad—this plate delivers bold flavors, texture, and tradition in every bite.

Preparation

  1. Step 1

    • Dissolve salt and Knorr Chicken Stock with water in a bowl.
    • In a rice cooker, pour seasoning liquid with rice. Put in pandan leaves, onion, ginger, coconut milk and start cooking in the rice cooker.
  2. Sambal

    • Heat up oil in a pan, saute aromatic with blended paste until fragrant for about 5 minutes. Add in chili paste continue to stir on medium low heat untill oil seperates from chilli.
    • Put in slice onion. Continue cooking to soften the onion texture. Completed with seasonings.
  3. Ikan Bilis and Kacang

    • Pre-heat Combi oven at 165c, fan 3, humidity 10%,. Put ikan bilis and peanuts on an individual trays, air-fry in the oven for 10 minutes and let it completely cool down
    • Blitz peanut and ikan bilis in a food processor into rough texture individually and mix all together
    • Lastly, season with Knorr Pasti Sedap and store it in an airtightcontainer.
  4. Compressed cucumber with sugar syrup inflused with lime and lemongrass.

    • Cut the japanese cucumber according to the size, skin on, removete seeds before cut into cubes
    • Put everything into a medium pot, bring to a boil to dissolve the sugar and Knorr Lime powder. Set aside and let it cool down completely.
    • Put cucumber cubes into a medium size vacuum bag, pour in the pickling liquid to cover the cucumber. Lastly, vacuum and sealed it in the vacuum machine until cucumber turns translucent. Store in Chiller
  5. Mango salad

    • Cut mango and red cabbage into julienne and set aside.
    • Mix both Knorr Rock Sugar Honey Sauce and pickling liquid in a bowl and set aside
    • In a mixing bowl, put in red cabbage, mango and compressed cucumber and toss it with dressing and ready to serve.
